Ever wonder how to cook deer sausage? The term venison actually refers to meat from various deer species and could be eaten in various forms such as roasts, steaks, and even sausages. Since we?fll be focusing on sausages, they could come in many forms such as fresh sausages without any curing salt, cured which has some sort of curing mixture, if not salt, the semi-dry form such as smoked sausages, and the dried form where no cooking was done.

Now, you will learn how to cook deer sausage. The recipes are also infinite and include several methods of application such as smoking, baking, frying and broiling. Pork is usually needed as an extra flavoring or fat enhancement since venison meat is actually fat free. The tools that are needed are a large mixing bowl, sausage casings and an oven. For the ingredients, one needs 4 1/2 pounds for ground venison, 1 pound of ground pork sausage, 2 tablespoons of salt, 2 tablespoons of sugar, 2 tablespoons of hickory smoked salt, and half a tablespoon of garlic powder. One might also need 2 1/2 tablespoons of mustard seeds, and finally 2 1/2 tablespoons of black pepper.

1. Start by mixing the venison and pork together in a huge bowl. Mix together the seasonings and spices into the bowl and mix them well. One may also add the pepper if ever one prefers their sausages to have this extra spicy taste. Afterwards, place the ground meat in a lid covered container and refrigerate for about a day. After you are done with this step, remove it from the refrigerator then mix up the ingredients again to make sure that it is marinated well. Afterwards, return the bowl into the fridge and refrigerate for 3 days.

2. Time to remove the mixture from the fridge. Place the right amount of meat into the sausage casings. Be careful not to put too much on the casing at it might burst due to excessive amounts.

3. There are a few methods when cooking deer sausage. In case you intend to bake then, place the casings on an oven rack, and then place the rack into a preheated oven. Let it cook for 8 hours time at 140 degrees. You may also wish to shorten the amount of time to four hours by cooking it into 280 degrees. Never cook too many sausages at a time. Cool the sausages for about 5 minutes before serving.

4. In case you prefer to fry your sausages, start by heating the oil in the frying pan before placing the sausages in the pan. Use medium heat only and slowly fry them and occasionally turning them. Continue frying until the liquid in the pan evaporates. Place them on a paper towel after cooking for excess oil absorption.
